"Mangels Ranch Vineyard is tucked into the southeast corner of the St. George Range in the Suisun Valley. The Vineyard is flat and even with a deep topsoil of silty clay loam before it hits a bedrock of sandstone and shale. It’s nutrient rich and vigorous and requires meticulous practices to achieve optimal fruit. Typically we make multiple passes, dropping fruit and managing the canopy in an effort to balance the vines and focus all that power to the grapes. The vineyard thrives on late morning and afternoon sun and experiences cooling salty breezes from both the San Pablo Bay (through a gap in the North Carquinez Hills) and Suisun Bay to the southeast. Harvest is done by hand in the early morning.
We whole cluster press the fruit to tank and rack it off the gross lees after a couple days. As soon as the native yeast fermentation begins, we move the juice to neutral french oak barrels in a cool room. It’s a long fermentation, and thanks to our previous years of experience with the vineyard, we’re able to forgo even basic nutrient additions and still feel confident it will finish healthy and dry. After primary, we inhibit malolactic and age the finished wine on the fine lees, employing batonage as desired for sensory. Because we like the mouthfeel the extra time on lees lends the finished wine we bottle a couple months later than most of our contemporaries."
